Food of Philippines

Filipino cooking blends native, Chinese, Malay, and Spanish influences into hearty, tangy, savory-sweet dishes. Vinegar, soy sauce, garlic, calamansi, and coconut milk flavor much of the food, and rice is eaten at every meal. Celebrations feature roast pig, noodles for long life, and sweets from coconut, rice, and purple yam. Regional cooking varies, with Bicol known for chilies and coconut and Ilocos for crisp pork and bitter melon.
