Food of Brunei

Bruneian food shares much with Malay cooking, with rice, fish, chicken, and coconut at its base and sambal, ginger, lemongrass, and tamarind as seasoning. The national dish ambuyat is a sticky starch eaten with a bamboo fork and dipped into sour sauces. Night markets serve satay, nasi katok, and fresh kuih.
