Food of Italy

Italian cooking is built on a few excellent ingredients treated simply: ripe tomatoes, olive oil, fresh pasta, cheese, cured meats and seasonal vegetables. Every region has its own identity, from butter, rice and polenta in the north to olive oil, citrus and seafood in the south. Meals unfold in courses, from antipasti to dolce, and are meant to be shared slowly with family and friends.
