Recipe
Make Tiramisu at home
Ingredients
- 1 1/2 cups (360 ml) strong brewed coffee or espresso, cooled
- 16 oz (450 g) mascarpone
- 4 large egg yolks
- 1/2 cup (100 g) sugar
- 1 cup (240 ml) heavy cream
- 24 ladyfingers (savoiardi)
- Unsweetened cocoa powder for dusting
How it's made
- Whisk yolks and sugar over a pan of barely simmering water until thick and pale, about 5 minutes, then cool.
- Beat in the mascarpone until smooth.
- Whip the cream to stiff peaks and fold it into the mascarpone mixture.
- Quickly dip each ladyfinger in the coffee and line the bottom of an 8x8-inch dish.
- Spread half the cream over, then repeat with a second layer of dipped ladyfingers and the rest of the cream.
- Chill at least 6 hours, then dust with cocoa before serving.
Variations
- Strawberry tiramisu.
- Chocolate tiramisu.
- Eggless tiramisu made with only cream and mascarpone.
Cook’s tip: Dip the ladyfingers quickly; a long soak will make the dessert watery.
