Recipe

Make German potato salad at home

Serves 6Time 50 minutes

Ingredients

  • 2 lb (900 g) waxy potatoes, boiled in their skins
  • 4 slices bacon, diced
  • 1 small onion, finely chopped
  • 1/2 cup (120 ml) beef or vegetable broth
  • 3 tbsp apple cider vinegar
  • 1 tbsp German or Dijon mustard
  • 1 tsp sugar
  • 2 tbsp chopped chives or parsley
  • Salt and pepper
  • 2 tbsp oil (if omitting bacon)

How it's made

  1. Boil the potatoes until just tender, 20 to 25 minutes; drain.
  2. Fry the bacon until crisp and remove, leaving a little fat.
  3. Cook the onion in the fat for 3 minutes.
  4. Add broth, vinegar, mustard, sugar, salt and pepper and warm through.
  5. Peel and slice the potatoes while still warm.
  6. Pour the hot dressing over the potatoes and toss gently.
  7. Fold in bacon and herbs and let stand 15 minutes before serving.

Variations

  • Northern style: mayonnaise, pickles and egg.
  • Vegetarian: omit the bacon and use oil.
  • Swabian style: with cucumber and extra broth.

Cook’s tip: Slice and dress the potatoes while they are warm; they soak up the dressing best.
