Recipe

Make Bratwurst at home

Serves 4Time 30 minutes

Ingredients

  • 4 fresh bratwurst sausages
  • 1 tbsp oil or butter
  • 1 large onion, sliced
  • 1 cup (240 ml) apple juice or light broth
  • 4 crusty rolls
  • Sweet or spicy German mustard
  • 1 cup sauerkraut, warmed
  • Salt and pepper

How it's made

  1. Prick the sausages lightly with a fork to prevent bursting.
  2. Heat the oil in a wide skillet and brown the sausages on all sides over medium heat, 5 minutes.
  3. Add the sliced onion and apple juice and simmer, covered, for 10 minutes.
  4. Uncover and cook until the liquid reduces and the onions turn golden.
  5. Check that the sausages reach 160 F (71 C) inside.
  6. Warm the rolls and the sauerkraut.
  7. Serve each sausage in a roll with onions, sauerkraut and plenty of mustard.

Variations

  • Grilled over charcoal for a smoky finish.
  • Nuremberg rostbratwurst: small links served in threes.
  • Bratwurst with lentils or potato salad on a plate.

Cook’s tip: Simmer first, then brown, and the sausages stay juicy with crisp skin.
