Ingredients

  • 1 kg beef or lamb, cubed
  • 2 tbsp vegetable oil
  • 1 large onion
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 3/4 cup natural peanut butter
  • 3 cups beef stock

How it's made

  1. Brown the meat in oil in batches and set aside.
  2. Cook onion and garlic in the same pot until soft, then add tomato paste for 2 minutes.
  3. Whisk the peanut butter with a cup of warm stock until smooth and stir into the pot.
  4. Return the meat, add remaining stock and the whole hot pepper, then simmer covered for 1 hour.
  5. Add sweet potatoes and carrots and cook 25 minutes more until tender.
  6. Season, remove the pepper, and serve over rice.

Variations

  • Chicken maafe: faster and lighter.
  • Vegetable maafe with cabbage and okra.

Cook’s tip: Use unsweetened peanut butter; stir often so the sauce does not catch on the bottom.
