Food of Bolivia
Bolivian food draws on high-altitude staples: hundreds of potato varieties, freeze-dried chuno, quinoa, corn and llama or beef. Highland kitchens favor warming soups and stews, while the lowlands of Santa Cruz cook with rice, cassava and river fish. Chili pastes called llajua brighten many plates. Mid-morning snacks like saltenas are a daily ritual, and lunch is the main meal.
