Make Fesenjan at home

Serves 4-6Time 2 hours

Ingredients

  • 2 cups (200 g) walnut halves
  • 1 large onion, chopped
  • 1.5 lb (700 g) bone-in chicken thighs
  • 3 tbsp oil
  • 1/2 cup pomegranate molasses
  • 2 cups water or chicken stock
  • 1 tbsp sugar, to taste
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • Salt and pepper

How it's made

  1. Toast the walnuts in a dry pan for 5 minutes, cool, then grind to a coarse paste in a food processor.
  2. Brown the onion in oil, add turmeric, then the chicken, and sear on all sides.
  3. Add the walnuts and stock, bring to a simmer, cover, and cook on low 40 minutes, stirring occasionally.
  4. Stir in pomegranate molasses, cinnamon and sugar.
  5. Continue to simmer uncovered 30 to 45 minutes until the sauce is thick, dark and glossy.
  6. Taste and balance sweet and sour with sugar or lemon juice.
  7. Serve with steamed rice.

Variations

  • Fesenjan with meatballs: use small seasoned meatballs instead of chicken.
  • Duck fesenjan: a rich restaurant-style version.
  • Vegetarian: butternut squash and chickpeas.

Cook’s tip: Stir often near the end because the walnut paste can catch on the bottom; add a splash of water if it gets too thick.
