Recipe

Make Chicken tikka masala at home

Serves 4Time 1 hour 15 minutes (plus marinating)

Ingredients

  • 1 1/2 lb (700 g) boneless chicken thighs, cut in chunks
  • 3/4 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp garam masala, divided
  • 1 tsp ground turmeric
  • 1 tbsp minced garlic and 1 tbsp grated ginger
  • 2 tbsp oil or ghee
  • 1 large onion, finely chopped
  • 1 can (14 oz) crushed tomatoes
  • 1 tsp ground cumin and 1 tsp paprika
  • 3/4 cup heavy cream
  • Salt and chopped cilantro

How it's made

  1. Mix the chicken with yogurt, lemon juice, 1 tbsp garam masala, turmeric, half the garlic and ginger, and salt. Marinate at least 1 hour.
  2. Thread the chicken on skewers or spread on a tray and broil or grill until browned at the edges, about 10 minutes.
  3. Heat oil in a large pan and cook the onion until soft and golden, 8 minutes.
  4. Add the remaining garlic and ginger, cumin, paprika and remaining garam masala; stir for 1 minute.
  5. Pour in the tomatoes and simmer 15 minutes until thick and the oil begins to separate.
  6. Stir in the cream and the grilled chicken and simmer gently 10 minutes.
  7. Taste for salt, finish with cilantro and serve with basmati rice or warm naan.

Variations

  • Paneer tikka masala: swap the chicken for cubes of paneer.
  • Shrimp tikka masala: use large shrimp and cook for less time.
  • Slow-cooker version: add the browned chicken to the sauce and cook on low for 4 hours.

Cook’s tip: Char the chicken well under a hot broiler; those smoky edges give the sauce its restaurant flavor.
