Recipe

Make Souvlaki at home

Serves 4Time 30 minutes plus marinating

Ingredients

  • 1 1/2 lb (680 g) pork shoulder or chicken breast, cut in 1-inch cubes
  • 1/4 cup (60 ml) olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp salt, 1/2 tsp pepper
  • 4 pita breads
  • Tomato, red onion, tzatziki and fries to serve

How it's made

  1. Combine the oil, lemon juice, garlic, oregano, salt and pepper and toss with the meat.
  2. Marinate in the fridge 2 to 8 hours.
  3. Thread onto skewers (soak wooden ones in water first).
  4. Grill over medium-high heat for 10 to 12 minutes, turning, until charred and cooked through.
  5. Warm the pita on the grill.
  6. Fill with the meat, tomato, onion and tzatziki and roll up.

Variations

  • Souvlaki me pita: wrapped sandwich.
  • Kalamaki: plain skewer on its own.
  • Chicken souvlaki.

Cook’s tip: Do not marinate longer than a day; the lemon will begin to toughen the meat.
