Recipe

Make Korean fried chicken at home

Serves 4Time 1 hour

Ingredients

  • 3 lb chicken wings or drumettes
  • 1/2 cup cornstarch
  • 1/2 cup flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Oil for frying
  • 3 tablespoons gochujang
  • 3 tablespoons ketchup
  • 3 tablespoons honey
  • 4 cloves garlic, minced

How it's made

  1. Pat the chicken very dry and season with salt and pepper.
  2. Toss with the cornstarch and flour mixture until lightly coated.
  3. Fry at 340 F (170 C) for 10 minutes, then drain on a rack for 10 minutes.
  4. Raise the oil to 375 F (190 C) and fry again 4-5 minutes until deep golden.
  5. Simmer gochujang, ketchup, honey, garlic and 2 tablespoons water for 3 minutes.
  6. Toss the hot chicken with the sauce and sprinkle with sesame seeds.

Variations

  • Soy garlic chicken: savory glaze
  • Plain crispy (huraideu) chicken
  • Honey butter chicken

Cook’s tip: The second fry at higher heat is what makes the crust glass-crisp.
