Recipe

Make Buffalo wings at home

Serves 4-6Time 1 hour 15 minutes

Ingredients

  • 3 lb (1.4 kg) chicken wings, split
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1/2 cup cayenne hot sauce
  • 4 tbsp butter, melted
  • 1 tsp white vinegar
  • Celery and carrot sticks
  • Blue cheese or ranch dressing to serve

How it's made

  1. Pat the wings very dry and toss with baking powder and salt.
  2. Arrange on a rack over a sheet pan and refrigerate uncovered for 1 hour if time allows.
  3. Bake at 425 F (220 C) for 45 to 50 minutes, flipping halfway, until golden and crisp.
  4. Whisk hot sauce, melted butter and vinegar in a large bowl.
  5. Toss the hot wings in the sauce until coated.
  6. Serve with celery, carrots and the dip.

Variations

  • Honey garlic: sweet and savory glaze.
  • Dry rub: seasoned with spices, no sauce.
  • Air-fried: crisped in an air fryer for less oil.

Cook’s tip: Baking powder dries the skin and gives oven wings a fried-style crunch.
