Recipe

Make Japanese curry at home

Serves 4-6Time 1 hour

Ingredients

  • 1 lb chicken thighs or beef, cubed
  • 2 potatoes, chunked
  • 2 carrots, chunked
  • 2 onions, sliced
  • 1 tablespoon oil
  • 4 cups water
  • 1 package (about 3.5 oz) Japanese curry roux
  • 1 apple, grated
  • Steamed rice
  • Pickled vegetables (fukujinzuke)

How it's made

  1. Heat the oil in a pot and cook the onions until deep golden, about 10 minutes.
  2. Add the meat and brown on all sides.
  3. Add the carrots, potatoes and water and bring to a simmer; cook 20 minutes until tender.
  4. Turn off the heat and stir in the roux blocks until dissolved.
  5. Add the grated apple and simmer gently 10 minutes until thick.
  6. Serve over rice with pickles.

Variations

  • Katsu curry: topped with fried pork cutlet
  • Curry udon: poured over noodles
  • Vegetable curry

Cook’s tip: Take the pot off the heat before adding the roux; it dissolves smoothly and will not clump.
