Serves 4Time 40 minutes

Ingredients

  • 2 potatoes, boiled and sliced
  • 1 cup green beans, blanched
  • 1 cup bean sprouts, blanched
  • 2 cups cabbage, blanched
  • 1 cucumber, sliced
  • 2 eggs, hard-boiled

  • 1 cup roasted peanuts
  • 2 garlic cloves
  • 2 red chilies
  • 2 tbsp kecap manis
  • 1 tbsp tamarind or lime juice
  • Shrimp crackers

How it's made

  1. Prepare vegetables: boil potatoes and blanch beans, sprouts, and cabbage until crisp-tender; chill under cold water.
  2. Pound or blend peanuts, garlic, chilies, kecap manis, tamarind, and about 3/4 cup warm water into a thick sauce; season with salt.
  3. Arrange vegetables, cucumber, tofu or tempeh, and eggs on a platter.
  4. Spoon the peanut sauce over the top.
  5. Sprinkle with fried shallots and serve with crackers.

Variations

  • Lotek: a Javanese version with cooked vegetables and sauce mixed in
  • Pecel: with spicy peanut sauce
  • Vegan: leave out egg

Cook’s tip: Warm the sauce slightly before serving; it spreads and coats better.
