Where it comes from

Chowder developed in the fishing towns of New England, where clams were plentiful and potatoes and cream stretched the catch into hearty meals. Variations appear up and down the coast, and it is often served in a bread bowl.

  • 2 tbsp flour
  • 2 cups clam juice
  • 3 medium potatoes, diced
  • 2 cans (6.5 oz) chopped clams with juice

How it's made

  1. Cook the bacon in a pot until crisp; remove and leave the fat.
  2. Soften the onion and celery in the bacon fat for 5 minutes.
  3. Sprinkle in the flour and stir 1 minute.
  4. Add clam juice, juice from the canned clams, potatoes, bay leaf and thyme; simmer 15 minutes until potatoes are tender.
  5. Stir in the clams and cream and warm through gently without boiling.
  6. Season with salt and pepper and top with bacon and crackers.

Variations

  • Manhattan: tomato-based with no cream.
  • Rhode Island: clear broth style.
  • Corn chowder: swap the clams for sweet corn.

Cook’s tip: Add clams at the end; boiling makes them rubbery.
