Recipe

Make Taiwanese beef noodle soup at home

Serves 4-6Time 2 hours 45 minutes

Ingredients

  • 2 lb beef shank, cut in chunks
  • 2 tablespoons oil
  • 4 cloves garlic, smashed
  • 2 inch ginger, sliced
  • 3 tablespoons doubanjiang
  • 1/3 cup soy sauce
  • 3 star anise
  • 1 cinnamon stick
  • 2 tomatoes, quartered
  • 8 cups water
  • Fresh wheat noodles
  • Pickled mustard greens, scallions, cilantro

How it's made

  1. Blanch the beef in boiling water for 5 minutes, then rinse.
  2. Heat the oil in a pot and fry the garlic, ginger and doubanjiang until fragrant.
  3. Add the beef, soy sauce, star anise, cinnamon and tomatoes and stir 2 minutes.
  4. Pour in the water and simmer, covered, 2 hours until the beef is very tender.
  5. Boil the noodles separately and divide into bowls.
  6. Top with beef and broth, then add pickled greens, scallions and cilantro.

Variations

  • Clear-broth version with daikon
  • Hong shao: soy-braised style with a darker, richer broth
  • Beef tendon and tripe variation

Cook’s tip: A long, gentle simmer yields tender beef; add water if it reduces too much.
