Where it comes from
Raclette is a beloved dish of the Swiss Alps, named for the French verb meaning to scrape. A wheel of cheese was once melted near a fire; today tabletop grills make it a sociable meal.

- 1 jar cornichons (small pickles)

- Arrange the cheese slices, pickles, onions and meats on platters.
- Heat a raclette grill or set the oven to broil.
- Place a slice of cheese in each small pan and melt until bubbly and lightly browned, about 3 minutes.
- Meanwhile, grill peppers and mushrooms on top.
- Pour the cheese over potatoes.
- Season with pepper and eat with pickles and meats.
Variations
- Wheel raclette: melted from the cut face of a half wheel.
- Vegetarian raclette with only vegetables.
