  • 2 tomatoes, halved
  • 8 button mushrooms
  • 1 can (15 oz) baked beans
  • 4 slices toast or fried bread

  • Salt, pepper and brown sauce

How it's made

  2. Fry the sausages in a little oil over medium heat for 12 to 15 minutes, turning until browned; keep warm.
  3. Fry the bacon until crisp and move to the oven.
  4. Cook the tomatoes cut side down and the mushrooms in butter until browned.
  5. Warm the beans in a small pan.
  6. Fry the eggs in the bacon pan to your liking.
  7. Toast the bread and plate everything together.

Variations

  • Full Irish: adds soda bread and potato bread.

  • Vegetarian: veggie sausages, extra mushrooms and hash browns.

Cook’s tip: Cook the sausages first, slowly, so they brown evenly, and time the eggs last.
