Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tbsp melted butter, plus more for the pan
  • 1 tsp vanilla extract

  1. Whisk the flour, sugar, baking powder and salt in a large bowl.
  2. In another bowl whisk the milk, egg, melted butter and vanilla.
  3. Pour the wet mixture into the dry and stir just until combined; a few lumps are fine.
  4. Rest the batter for 5 minutes.
  5. Heat a skillet or griddle over medium heat and brush with butter.
  6. Pour 1/4 cup batter per pancake and cook until bubbles form and burst, about 2 minutes.
  7. Flip and cook 1 to 2 minutes more until golden. Serve warm with syrup.

Variations

  • Buttermilk pancakes: swap milk for buttermilk and add 1/2 tsp baking soda.
  • Blueberry pancakes: dot berries into the batter on the griddle.
  • Banana pancakes: mash a ripe banana into the batter.

Cook’s tip: Do not overmix; lumpy batter makes the lightest pancakes.
