Ingredients
- 1 lb dried black beans, soaked overnight
- 1 lb smoked pork ribs or pork shoulder
- 1/2 lb smoked sausage (linguica), sliced
- 1/2 lb bacon, diced
- 1 onion, chopped
- 5 cloves garlic, minced
- 3 bay leaves
- 1 bunch collard greens
- 2 oranges, sliced
- Cooked white rice and farofa for serving
How it's made
- Drain the beans and place in a large pot with fresh water, the pork and bay leaves.
- Simmer gently for 1.5 hours, skimming foam, until the beans begin to soften.
- Fry the bacon, sausage, onion and garlic together in a pan until browned and add to the pot.
- Simmer another 45 minutes to 1 hour until the beans are creamy and the meats are tender.
- Saute the collards quickly with garlic and olive oil.
- Serve the feijoada with rice, collards, farofa and orange slices.
Variations
- Feijoada vegetariana: with mushrooms and smoked paprika.
- Feijoada light: with chicken sausage and lean pork.
Cook’s tip: Taste the beans before adding salt since smoked meats are already salty.
