Where it comes from

Faloodeh is a very old frozen dessert associated with the city of Shiraz and found across Iran in summer. Its icy, granita-like texture comes from freezing a sugar syrup with fine noodles.

Recipe

Make Faloodeh at home

Serves 4-6Time 30 minutes plus 3 hours freezing

Ingredients

  • 1 cup sugar
  • 2 cups water
  • 1/4 cup rose water
  • 4 oz (115 g) thin rice vermicelli
  • 3 tbsp lime juice
  • Sour cherry syrup (optional)
  • Crushed ice for serving
  • Chopped pistachios (optional)

How it's made

  1. Simmer the sugar and water for 5 minutes until dissolved, then stir in rose water and cool completely.
  2. Cook the vermicelli in boiling water 3 to 4 minutes, drain, rinse in cold water and cut into short pieces.
  3. Mix the noodles into the syrup and pour into a shallow dish.
  4. Freeze 2 to 3 hours, scraping with a fork every 30 minutes to create a slushy texture.
  5. Before serving, scrape again to fluff the ice.
  6. Spoon into bowls, squeeze lime juice on top and add cherry syrup if you like.
  7. Garnish with pistachios and serve immediately.

Variations

  • Add a splash of sour cherry syrup.
  • Serve with a scoop of saffron ice cream.
  • Add grated cucumber for a lighter version.

Cook’s tip: Break up the ice crystals regularly while freezing so it stays slushy rather than solid.
