Ingredients

  • 8 cups whole milk
  • 3 tbsp lemon juice or vinegar
  • 1 tbsp semolina or flour (optional)
  • 1 1/2 cups sugar
  • 5 cups water
  • 4 cardamom pods

  2. Hang the cloth for 30 minutes to remove excess water.
  3. Knead the chhena for 8 to 10 minutes until smooth and grain-free.
  4. Form into smooth balls without cracks.
  5. Boil sugar, water and cardamom, then add the balls in a single layer.
  6. Cover and boil gently 15 minutes until they double in size.
  7. Add rose water, cool and chill in syrup.

Variations

  • Kesar rasgulla with saffron.
  • Rasmalai, flattened and served in cream.
  • Orange-colored Odisha rasagola.

Cook’s tip: Knead the chhena well; any lumps will crack the balls as they cook.
