Serves 4Time 40 minutes

Ingredients

  • 2 cups Japanese short-grain rice
  • 2 1/4 cups water
  • Salt
  • 4 nori strips
  • 1/2 cup flaked cooked salmon
  • 2 tablespoons mayonnaise
  • Pickled plum (umeboshi), optional
  • Toasted sesame seeds

How it's made

  1. Rinse the rice and cook it with the water; let it cool until warm enough to handle.
  2. Mix the salmon with the mayonnaise for one filling.
  3. Wet your hands and rub them with a little salt.
  4. Take a handful of rice, press a dent in it, add a spoonful of filling, and cover with more rice.
  5. Press and turn the rice into a triangle, squeezing firmly but gently.
  6. Wrap each with a strip of nori and add sesame seeds if you like.

Variations

  • Yaki-onigiri: grilled with soy glaze
  • Takikomi onigiri: made with seasoned mixed rice
  • Tuna-mayo filling

Cook’s tip: Shape the rice while it is still warm; cold rice will not hold together.
