Where it comes from
The name means roughly 'grilled as you like it', and the dish is closely associated with Osaka and Hiroshima. Diners often cook it themselves on a hot plate at the table.

Recipe
Make Okonomiyaki at home
Ingredients
- 2 cups finely shredded cabbage
- 1 cup all-purpose flour
- 3/4 cup dashi or water
- 3 eggs
- 4 strips bacon or 1/2 cup shrimp
- 2 scallions, chopped
- Oil for the pan
- Okonomiyaki or tonkatsu sauce
- Japanese mayonnaise
- Bonito flakes and nori powder
How it's made
- Whisk the flour, dashi and 1 egg into a smooth batter.
- Fold in the cabbage, scallions and the remaining eggs.
- Heat an oiled skillet over medium heat and pour in a quarter of the batter, shaping a round about 1 inch thick.
- Lay bacon or shrimp on top and cook for 4-5 minutes until golden underneath.
- Flip carefully and cook another 4-5 minutes until cooked through.
- Brush with sauce, drizzle with mayonnaise and sprinkle with bonito flakes and nori.
Variations
- Hiroshima style: layered with noodles instead of mixed batter
- Modan-yaki: with yakisoba noodles added
- Monjayaki: a runnier Tokyo version
Cook’s tip: Keep the cabbage pieces fine and do not press the pancake while cooking, or it turns dense.
