Recipe

Make Menemen at home

Serves 2-3Time 25 minutes

Ingredients

  • 2 tbsp butter or olive oil
  • 2 green peppers (Turkish sivri), sliced
  • 3 ripe tomatoes, peeled and diced
  • 4 large eggs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp Aleppo pepper or chili flakes
  • 1/4 cup crumbled white cheese (optional)
  • Chopped parsley
  • Crusty bread

How it's made

  1. Melt the butter in a wide skillet over medium heat.
  2. Cook the peppers for 4 minutes until soft.
  3. Add the tomatoes and cook for 8 to 10 minutes until the liquid has reduced and the mixture is jammy.
  4. Season with salt and pepper.
  5. Crack the eggs into the pan and stir gently with a fork until just set but still soft and creamy.
  6. Sprinkle with cheese, chili flakes and parsley.
  7. Serve at once in the pan with bread.

Variations

  • Menemen with onions: The version many people prefer.
  • Menemen with sucuk: Includes spiced sausage slices.
  • Cheesy menemen: Finished with kasar cheese.

Cook’s tip: Pull the pan off the heat while the eggs are still a little wet; the residual heat finishes them without drying them out.
