Recipe

Make Lamington at home

Serves 12-16Time 1 hour 30 minutes

Ingredients

  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 3 eggs
  • 2 cups self-rising flour
  • 1/2 cup milk
  • 1 tsp vanilla
  • Chocolate icing: 3 cups powdered sugar, 1/3 cup cocoa, 1/2 cup hot milk, 1 tbsp butter
  • 3 cups desiccated coconut

How it's made

  1. Heat oven to 350 F and line a 9x13-inch pan.
  2. Cream butter and sugar, then beat in eggs one at a time and vanilla.
  3. Fold in flour alternately with milk and spread in the pan.
  4. Bake 30 minutes until golden, then cool and chill (preferably overnight) so it cuts cleanly.
  5. Cut into 2-inch squares.
  6. Whisk the icing ingredients until smooth.
  7. Dip each cube in icing using forks, then roll in coconut and set on a rack to dry.

Variations

  • Jam and cream-filled lamingtons
  • Strawberry icing
  • Raspberry coconut version

Cook’s tip: Use day-old cake; fresh sponge falls apart in the icing.
