Recipe

Make Irish stew at home

Serves 4-6Time 2 hours 15 minutes

Ingredients

  • 2 lb (900 g) lamb shoulder or neck, cut in large pieces
  • 2 tbsp oil
  • 2 onions, sliced
  • 3 carrots, thickly sliced
  • 2 lb (900 g) potatoes, peeled and cut in chunks
  • 3 cups (700 ml) lamb or chicken stock
  • 2 sprigs thyme and 1 bay leaf
  • Salt and pepper
  • Chopped parsley

How it's made

  1. Trim the lamb and brown it in oil in batches, then set aside.
  2. In the same pot, soften the onions for 5 minutes.
  3. Return the lamb and add stock, thyme and bay leaf; bring to a simmer.
  4. Cover and cook gently for 1 hour.
  5. Add half of the potatoes and the carrots and cook 30 minutes.
  6. Add the remaining potatoes and cook 20 minutes more so some break down and thicken the stew.
  7. Season, sprinkle with parsley and serve with soda bread.

Variations

  • Dublin coddle-style, with sausage instead of lamb.
  • Beef stew with root vegetables.
  • Pearl barley added for extra thickness.

Cook’s tip: Add the potatoes in two stages: some hold their shape and some melt into the broth.
