Recipe

Make French onion soup at home

Serves 6Time 1 hour 30 minutes

Ingredients

  • 4 large yellow onions (about 2 lb / 900 g), thinly sliced
  • 3 tbsp butter and 1 tbsp oil
  • 1 tsp sugar
  • 2 tbsp flour
  • 6 cups (1.5 L) beef stock
  • 1 tsp thyme and 1 bay leaf
  • 1 tbsp apple cider vinegar or a splash of apple juice
  • Salt and pepper
  • 6 slices baguette, toasted
  • 1 1/2 cups grated Gruyere

How it's made

  1. Melt the butter with the oil in a large heavy pot over medium heat.
  2. Add the onions and sugar and cook, stirring often, 40 to 50 minutes until deep brown and jammy.
  3. Stir in the flour and cook 2 minutes.
  4. Add the stock, thyme and bay leaf and simmer 25 minutes.
  5. Stir in the vinegar, season, and discard the bay leaf.
  6. Ladle into oven-safe bowls, float a toast slice on each and pile with cheese.
  7. Broil 3 to 5 minutes until golden and bubbling.

Variations

  • Vegetarian: use mushroom or vegetable stock.
  • Gratinee with blue cheese: for a stronger flavor.
  • Quick version: cook the onions in a slow cooker overnight.

Cook’s tip: Be patient with the onions; true deep color cannot be rushed, and a splash of water helps if they stick.
