Where it comes from

Eclairs belong to the French choux pastry tradition and have been a bakery staple since the nineteenth century. The name means lightning, perhaps because they are eaten so quickly.

Serves 10 eclairsTime 2 hours

Ingredients

  • 1 cup (240 ml) water
  • 6 tbsp (85 g) butter
  • 1 cup (125 g) all-purpose flour
  • 4 eggs
  • 1/2 tsp salt
  • 2 cups (475 ml) milk, 4 egg yolks, 1/2 cup sugar, 1/4 cup cornstarch and 1 tsp vanilla for pastry cream
  • 4 oz (115 g) dark chocolate and 1/2 cup cream for glaze

How it's made

  1. Boil water, butter and salt; add flour all at once and stir until a smooth ball forms and a film coats the pan.
  2. Cool 5 minutes, then beat in the eggs one at a time to a glossy, pipeable paste.
  3. Pipe 4-inch (10 cm) logs onto lined trays.
  4. Bake at 400 F (200 C) for 15 minutes, then 350 F (175 C) for 20 minutes until golden; do not open the oven early.
  5. For the cream, whisk yolks, sugar and cornstarch; whisk in hot milk, cook until thick, add vanilla, and chill.
  6. Poke holes in the ends of the cooled shells and pipe in the cream.
  7. Melt the chocolate with warm cream and dip the tops.

Variations

  • Coffee eclair: coffee-flavored cream and glaze.
  • Salted caramel eclair.
  • Fresh fruit eclair with whipped cream.

Cook’s tip: Dry the choux shells in the turned-off oven for 10 minutes so they stay crisp after filling.
