Recipe

Make Cepelinai at home

Serves 4Time 1 hour 30 minutes

Ingredients

  • 3 lb (1.4 kg) raw potatoes, peeled
  • 1 lb (450 g) cooked potatoes, mashed
  • 1 tsp salt
  • Filling: 1 lb (450 g) ground pork, 1 onion, salt, pepper, marjoram
  • Sauce: 1 cup sour cream, 6 slices diced bacon, 1 onion
  • Chopped dill to serve

How it's made

  1. Mix the filling ingredients and form 8 oval portions.
  2. Finely grate the raw potatoes and squeeze out the liquid through a cloth, saving the starch that settles.
  3. Stir the starch back into the grated potato and mix in the mashed potato and salt.
  4. Wrap a handful of potato mixture around each meat portion to form an oval.
  5. Slide the dumplings into simmering salted water and cook 25 minutes.
  6. Fry the bacon and onion until golden.
  7. Serve the dumplings topped with bacon and sour cream.

Variations

  • Cottage-cheese or mushroom filling.
  • Baked in the oven with gravy.
  • Smaller versions for children.

Cook’s tip: Simmer, never boil hard, or the dumplings can split open.
