Where it comes from

The ackee tree came to Jamaica from West Africa, and the combination with salt cod became the island's signature breakfast. It is traditionally served with fried dumplings, boiled green bananas and breadfruit.

Recipe

Make Ackee and saltfish at home

Serves 4Time 40 minutes plus soaking

Ingredients

  • 1 lb salted cod (saltfish)
  • 1 can (19 oz) ackee, drained
  • 2 tbsp oil
  • 1 onion, sliced
  • 1 tomato, chopped
  • 1 scallion, sliced
  • 1 sprig thyme
  • 1/2 scotch bonnet pepper, minced
  • 1 bell pepper, sliced
  • Black pepper

How it's made

  1. Soak the saltfish overnight, or simmer in fresh water for 20 minutes, changing the water, to remove excess salt.
  2. Flake the fish, discarding bones and skin.
  3. Heat the oil and cook onion, scallion, thyme and peppers for 4 minutes.
  4. Add the tomato and flaked fish and cook 3 minutes.
  5. Fold in the ackee gently so it does not break apart.
  6. Cook 5 minutes, season with black pepper and serve with dumplings or breadfruit.

Variations

  • With bacon: crisp bacon crumbled on top.
  • Callaloo and saltfish: a related dish with leafy greens.
  • Fried dumplings: the classic side.

Cook’s tip: Only use ackee that is canned or fully ripened and naturally opened, never unripe.
