Serves 4Time 35 minutes

Ingredients

  • 2 cans (5 oz / 140 g each) good tuna in olive oil
  • 8 oz (225 g) small potatoes, boiled and halved
  • 6 oz (170 g) green beans, blanched
  • 4 eggs, hard-boiled and quartered
  • 3 ripe tomatoes, cut in wedges
  • 1/2 cup Nicoise or black olives
  • 6 anchovy fillets
  • 1 small red onion, sliced
  • Fresh basil leaves
  • 1/3 cup olive oil, 2 tbsp red vinegar, 1 tsp Dijon mustard

How it's made

  1. Boil the potatoes until tender, drain and let cool slightly.
  2. Blanch the green beans 3 minutes and plunge into cold water.
  3. Boil the eggs for 9 minutes, cool and peel.
  4. Whisk the oil, vinegar, mustard, salt and pepper into a dressing.
  5. Arrange lettuce on a platter and add potatoes, beans, tomatoes, onion and olives in sections.
  6. Top with the tuna, eggs, anchovies and basil.
  7. Drizzle with dressing just before serving.

Variations

  • Seared tuna Nicoise: fresh seared tuna in place of canned.
  • Vegetarian: omit the fish and add artichoke hearts.
  • Sandwich style (pan bagnat): the same fillings in a round roll.

Cook’s tip: Dress the potatoes while still warm so they soak up the vinaigrette.
