Pepperpot
Pepperpot is a rich, dark Guyanese stew of beef or pork cooked slowly with cassareep, cinnamon, cloves and hot pepper. The cassareep, made from cassava, gives the sauce its color and a tangy-sweet depth. It is served with bread or rice at celebrations and family gatherings.
Where it comes from
Pepperpot is Guyana's national dish and builds on Indigenous Amerindian cooking with cassareep. The stew is traditionally kept simmering for days and reheated.
