Serves 4Time 30 minutes

Ingredients

  • 12 corn tortillas, cut in wedges
  • Oil for frying
  • 2 cups salsa verde or roja
  • 1/2 cup chicken stock
  • 1/2 cup crumbled queso fresco
  • 1/4 cup crema
  • 1/4 cup sliced onion
  • 2 tbsp cilantro
  • 4 fried eggs
  • Avocado slices

How it's made

  1. Fry the tortilla wedges in hot oil until crisp, or bake at 400 F for 10 minutes. Salt lightly.
  2. Heat the salsa and stock in a wide skillet until simmering.
  3. Add the chips and toss for 1 minute so they soften slightly but stay a bit crisp.
  4. Divide among plates.
  5. Top with cheese, crema, onion and cilantro.
  6. Add a fried egg and avocado and serve right away.

Variations

  • Chilaquiles with chicken: add shredded chicken.
  • Divorced: half red and half green salsa.
  • Baked: in a casserole with cheese.

Cook’s tip: Serve right away; the chips soften quickly once sauced.
