Recipe

Make Apple pie at home

Serves 8Time 2 hours plus cooling

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup cold butter, cubed
  • 1 tsp salt
  • 6 to 8 tbsp ice water
  • 6 medium apples, peeled and sliced
  • 3/4 cup sugar
  • 2 tbsp flour
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 egg, beaten

How it's made

  1. Rub the butter into the flour and salt until pea-sized pieces remain; add water a spoonful at a time until the dough just holds. Divide in two, wrap and chill 1 hour.
  2. Toss the apples with sugar, flour, spices and lemon juice.
  3. Roll out half the dough and line a 9-inch pie plate.
  4. Pile in the apples and dot with a little butter.
  5. Roll the second crust, cover the pie, crimp the edges and cut a few steam vents.
  6. Brush with beaten egg and bake at 425 F (220 C) for 20 minutes, then 375 F (190 C) for 35 to 40 minutes until golden and bubbling.
  7. Cool at least 1 hour before slicing.

Variations

  • Dutch apple: with a crumb topping.
  • Lattice top: woven strips of pastry.
  • Cheddar crust: a little sharp cheddar worked into the dough.

Cook’s tip: Mix tart and sweet apples like Granny Smith and Honeycrisp for the best flavor and texture.
